1/2 stick unsalted butter, room temperature
3/4 cup packed brown sugar
2 large egg yolks
4 large egg whites
1 tsp vanilla
8 oz semi-sweet chocolate, melted
1/2 cup cake meal (you can use matzo meal as well)
1/4 tsp salt
8 oz white chocolate chips
Preheat oven to 350 degrees. Beat butter and sugar until fluffy. Beat in egg yolks and vanilla. Add melted chocolate, cake meal and salt. Beat until mixture comes together (it should be thick).
In a clean bowl, beat egg whites until stiff peaks form. Gently fold into chocolate mixture. Add chocolate chips and stir. Let sit about 15 minutes.
Prepare your baking sheet by lining with parchment or silpat. Scoop 2-inch balls onto pan and bake about 10 to 12 minutes or until set. Let cool on wire rack in pan for about 2 minutes and then transfer cookies to rack and let cool completely.
