2 1/2 cups flour
2 tsp baking powder
/2 tsp baking soda
1/2 tsp salt
2 sticks butter (room temperature)
1 cup sugar
3 eggs
1 tsp. vanilla extract
1/2 cup evaporated milk
1/4 cup sour cream
3 medium size bananas (mashed)
raisins and nuts as much as you like (optional)
Prepare 2 loaf pans and preheat oven to 350 degrees. In medium bowl combine all dry ingredients and set aside.
In large bowl, beat butter with sugar and then add eggs one at a time. Next add the vanilla. In a small bowl, mix the sour cream with the mashed bananas. Begin to add your dry ingredients in thirds with the milk (1/3 of flour mixture, then half of the milk, then another 1/3 of flour mixture, then the remaining milk and then end with last 1/3 of flour mixture). After ingredients are fully incorporated, mix by hand the banana and sour cream and add your nuts and raisins. Bake for about 35 minutes or until done. Enjoy!!
